My Pumpkin Spice Coconog recipe is Whole30 compliant and dairy-free, but definitely not flavor-free. Using a Vitamix blender gives it an even creamier consistency!

Ingredients
  • 2 cups coconut milk
  • 4-6 pitted dates chopped
  • 1/4 cup pumpkin puree
  • 1/2 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1/4 cup espresso or very strong coffee
Instructions
  1. In a small saucepan, heat the coconut milk until hot but not boiling.

  2. Combine all ingredients in a Vitamix (or blender) and blend on high for 2 minutes.

  3. Serve in a mug topped with a sprinkle of cinnamon.

Recipe Notes

Add a shot of rum to make it a true nog...
