BLT Salad

This is a very simple BLT salad recipe that you can throw together in a pinch. Who doesn’t love bacon? Growing up, one of my favorite lunches consisted of a BLT sandwich with potato chips. There’s just something about how the bacon, lettuce, tomato work together. Here’s a simple salad version of the classic BLT with a few added twists to spice things up!

Ingredients
  • 1 head butter lettuce
  • 8 slices bacon cooked crisp, chopped
  • 8 cherry tomatoes quartered
  • 1 small hass avocado chopped
Basic Vinaigrette Dressing
  • 1 tbsp olive oil
  • 1 tsp red wine vinegar
  • 1 tsp whole grain mustard
  • 1/2 tsp garlic powder
  • salt and pepper to taste
Instructions
  1. Roughly chop the butter lettuce, wash, spin/dry, and place in a serving bowl. Any good quality lettuce or greens can be used. I just like how the texture and flavor of butter lettuce work with bacon.

  2. Add bacon, tomatoes, and avocado to the lettuce and toss with the vinaigrette dressing or your dressing of choice.

  3.  Ranch or blue cheese dressings work well too but of course, that wouldn't be whole30 🙂
